Ingredients

500 grams of broccoli
500 grams of potatoes
2 eggs
180 barley flour
4 tablespoons of Parmesan cheese
2 tablespoons of pecorino cheese

Recipe preparation

Wash and clean the broccoli. Ours was a single piece of 500 gr. about. Let’s reduce it to small peaks eliminating only the hardest part.

Peel the potatoes and cut them into small pieces. Put in a pressure cooker broccoli and potatoes, a teaspoon of fennel seeds, a glass of water. Cook for 10 minutes starting from the whistle. If you use a normal pot, extend the cooking time to about 25 minutes with three glasses of water. At the end of cooking drain any residual water and to reduce pulp, even with a fork, it is not necessary to blend, indeed a certain irregularities gives a pleasant sensation on the palate. Add the barley flour, when the mixture is still hot, a teaspoon of other fennel seeds and mix with the cheese, season with salt and pepper.
