Vegetarian meatballs with lentil flour
Vegetarian meatballs with lentil flour for a tasty aperitif or starter. Quick to prepare and with few ingredients. The version we offer is without eggs.
150 gr lentil flour
2 big carrots
1 garlic tip
6 tablespoons breadcrumbs gluten free
6 tablespoons of Parmesan cheese
2 tablespoons of pecorino cheese
2 glasses of hot water
salt and extra virgin olive oil q.b.
Vegan Lentil Meatballs Recipe
Let’s start with the main ingredient of these vegetarian meatballs with lentil flour: gluten-free flour. If you don’t have lentil flour, try grinding red lentils in a powerful food processor or coffee grinder. What better opportunity to experiment with homemade lentil flour.
We proceed with order. We select the lentils to be ground with a quick glance, for any impurities. We need 150 grams of flour so we will weigh about 180 gr. During grinding a part will not serve our purpose. We scour the flour and set aside.
To start peel two carrots, clean the half onion which will be finely chopped (you can also use the food processor or a chopped vegetables). We also add a bit of garlic if you like. The base is therefore ready. We put olive oil in the pan and light the fire. Add the chopped vegetables and let it simmer for 2 minutes on a low heat. Finally add two glasses of hot water and bring to a boil for a few minutes.
At the end add the lentil flour and turn off the heat. We mix with decision to allow the flour to absorb all the water and form a compact dough. Let it cool for a few minutes. Then we will add the grated bread that will make the dough more compact (you can use breadcrumbs without gluten), cheese, parsley and knead by hand. We form our meatballs and fry in boiling oil until cooked.
